Easy As Pie

My mom belongs to the generation where baked goods must be supplied to visitors. Actually, maybe it’s not a generational thing; just a niceness factor and good hospitality trait.

My Grandma Freda on my father’s side was the same way. In fact, Grandma had a rule. All new brides must receive a good rolling pin. A rolling pin is essential for making great pies and for using on your husband if he gets out of line.

To keep with tradition, my brother gave me a rolling pin as a wedding gift. I’ve used it to roll out a few things; never a pie though. I mainly just keep it handy in case I need to use it on my husband.

The reason I’ve never made a homemade pie crust is because dough scares me and also there’s no need because we have a pie recipe in our family that does not require it.

This has long been my mom’s go to recipe for when someone calls and says they are on their way over for a visit. It’s called No-Roll Pie and is extremely easy. My mom doesn’t remember where she got the recipe but I’m willing to bet she tore a page out of a Good Housekeeping magazine in the dentist office in 1978. She does this sort of thing quite a bit and then feels guilty and makes her confessional to me to ease her conscience. She should feel guilty about this one because plenty of people missed out on a good recipe while flipping through that magazine.

The best thing about this recipe is that it takes 5 minutes to prepare, needs very few ingredients and is absolutely delicious.

If someone calls you this holiday season and says they are on their way over for a visit, put this pie to the test. I guarantee you will get oohs and aahs.

No Roll Pie

Crust

  • 1 stick of butter (melted)
  • 1 Tbsp. sugar
  • 1 C. flour

Stir until ball forms. Press into pie pan.

Pour in 15 oz. pie filling of choice

Topping

  • 1 egg
  • ½ C. sugar
  • ¼ C. flour
  • ¼ C. milk

Beat together and pour over pie filling

Bake at 350 degrees for 40 minutes

    • Oh trust me you will not be rolling! If anything you may need to flour your hands to press the dough into the pan. This last time I made it the dough was a little sticky (that may have something to do with my 2 year old was helping me measure!).

  1. I am making this today!!! I forgot about this little gem. I’ve had a can of apple pie filling in my pantry for months, I had visions of surprising everyone with pancakes one morning and using it as a topping. Alas, this vision never came to fruition. But this pie, I can taste it already. I will tell Gary he has you to thank. Have a great day! Hope all is well. How’s the xmas shopping going? I’ve done mine for the boys online, couldn’t bear the thought of shopping in stores this year. I told the big “kids”, they were doing without this year-I know they are just fine with that. (NOT) I’m thinking I might add your tradition you have at moms and do that game with the presents and cards. I’ll just get little stuff, and maybe some household essential stuff that I know they hate spending money on, toilet paper, garbage bags, etc. Surely they’ll be thrilled : ) Love you!   2. I LOVE blueberries! Until I buy all the necessary ingredients to make this yummy looking pie, I am going to settle for a peanut butter and blueberry preserve sandwich. Off to make my pre-dinner snack! 🙂

  3. Looks like fun to make and fun to eat! I am much bolder in cooking than I am in baking–I like the freedom to improvise with ingredients, and baking is more like a science experiment to me. I’ll keep this one in mind! Happy December, and have a great time preparing for Christmas!

  4. OMG Your mum is me and my mum! We both sit in waiting rooms, carefully tearing out a recipe and coughing to cover the noise! Mind you we have so many and hardly ever looked at…perhaps just the thrill of the tear that we seek 🙂 PS I Cheat and buy ready made pastry – but it looks yummy 🙂
